Basic Beef Curry (serves 4)
Ingredients:
1lb beef cut into chunks
2 onions finely chopped
4 cloves garlic, finely chopped
2 teaspoons grated ginger
1-2 fresh chillies finely chopped
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon ground tumeric
¼ teaspoon chilli powder
250mls (8 fl/oz) water
1 x 225g (8oz) tin chopped tomatoes
Method:
1) Fry the onions in a little oil until softened.
2) Add the beef chunks and colour on all sides.
3) Add the garlic, ginger and chilli and cook for a few minutes, then add the cumin, coriander, turmeric and chilli powder and cook for a further few minutes mixing well.
4) Add the water and chopped tomatoes and leave to simmer for about 40 minutes, stirring occasionally, until the beef is cooked and tender.
Alternatives:
- Use 4 skinless and boneless chicken breasts cut into chunks instead of beef and add some frozen or finely chopped fresh spinach with the tomatoes.
- Use chunks of lamb instead of beef and add 4 large chopped fresh tomatoes instead of tinned and flavour with lime zest.
