Basic Tomato Sauce for pasta (serves 2)
Ingredients:
1 tablespoon oil
1 large onion finely chopped
1-2 cloves garlic finely chopped
Pinch dried herbs e.g. basil or oregano
Teaspoon tomato puree (check label for no added salt versions)
1x 225g/8oz tin chopped tomatoes
Method:
1) Fry the onion and garlic in the oil until softened.
2) Add a pinch of dried herbs of your choice e.g. basil or oregano.
3. Add a teaspoon of tomato puree and stir.
4) Pour in tin chopped tomatoes, stir, and leave to simmer for at least 10 minutes.
5) Season with black pepper.
Alternatives:
- Use chopped fresh herbs instead of dried and add with the tin of tomatoes.
- Add other vegetables such as peppers or mushrooms and fry with the onion.
- For a meaty pasta sauce add some minced meat and fry with the onions and garlic.
- Alternatively add some tinned tuna and sweetcorn just before you add the chopped tomatoes.
- For a hotter flavour, finely chop a fresh chilli and fry with the onions and garlic.
