Basic Vegetable Soup (serves 4)
Ingredients:
1 large onion chopped
2 cloves of garlic chopped
1 lb mixed vegetables (e.g. carrots, celery. leeks, cabbage) roughly chopped
2 pints low salt stock (see alternative recipe page)
Method:
1) Place the onion, garlic and mixed vegetables in a pan.
2) Add the low salt stock and bring to the boil
3) Cover and simmer for about 20 - 30 minutes.
4) Use a food processor or a hand blender to blend to a smooth consistency, season with black pepper.
Alternatives:
- Add a handful of chopped fresh herbs before serving to add further flavour.
- For a creamy vegetable soup, stir in some crème fraiche before serving or substitute some of the stock for milk.
- Canned beans (with no added salt), such as kidney or butter beans, can be added towards the end of cooking time for a hearty vegetable soup.
