Quick and Easy Chicken and Vegetable Stir Fry (serves 2)
Ingredients:
1 tablespoon oil
2 skinless and boneless chicken breasts cut into thin strips
1 - 2 cloves garlic finely chopped
1 teaspoon grated ginger
1 fresh green chilli finely chopped
1 small carrot peeled and finely sliced
1 red pepper deseeded and finely sliced
4 baby sweetcorn sliced in half lengthways
1 spring onion finely sliced
Method:
1) In a wok or large frying pan heat the oil, then add the chicken strips and cook for about 5 minutes, until cooked through.
2) Once cooked transfer the chicken strips to a separate plate.
3) Fry the sliced vegetables over a high heat for 3-4 minutes. Keep stirring to stop them from burning.
4) Once they start to soften, add the chopped garlic, ginger and fresh chilli and continue to fry whilst stirring for a further 3 minutes.
5) Return the cooked pieces of chicken and heat through.
6) Serve with noodles or rice.
Alternatives:
- Use different oils such as walnut or sesame oil for a different flavour.
- Garnish with chopped fresh coriander and lime juice or sesame seeds.
- Use different vegetables such as pak choi, mange tout, sweet peppers, bean sprouts or tinned bamboo shoots / water chestnuts.
