Chicken Kebabs (serves 4)

Ingredients:
1lb (450g) skinless, boneless chicken pieces
1 yellow and 2 red peppers deseeded
2 courgettes
2 tablespoons olive oil
Juice of 1 lemon
1 clove of garlic, crushed
2 sprigs of fresh rosemary roughly chopped

Method:
1) Cut the chicken into 1 inch chunks and cut the peppers and courgettes into 1 inch pieces.
2) Alternately thread the chicken, pepper and courgette pieces onto skewers.
3) To make the marinade: mix the olive oil, lemon juice, garlic and rosemary together.
4) Brush the marinade over the kebabs, cover and refrigerate for up to 24 hours.
5) To cook the kebabs, grill under a high heat, turning every few minutes. Brush with any extra marinade if needed.
6) Cook until the chicken is cooked through and the kebabs are browned.
7) Serve with rice or pitta bread and salad.
