Gravy
Gravy made with gravy granules is high in salt and will easily increase the salt content of your meal. To reduce the amount of gravy you have on your food try some of the tips for adding flavour mentioned in the Reprogram your Tastebuds section. However, some meals such as Sunday dinner are not quite the same without gravy, so you could make your own low salt gravy or a red wine sauce as an alternative.
Gravy Recipe:
1) If you have roasted a whole chicken or a joint of meat save all the juices that are left in the roasting tray.
2) Either heat the juices in the roasting tray (if hob proof) or alternatively transfer to a saucepan.
3) Add 2 tablespoons of flour and mix thoroughly with the juices.
4) Stir or whisk constantly over a medium heat while gradually adding 1 pint of hot homemade low salt stock or vegetable water.
6) Simmer and stir for about 5 minutes until the juices thicken.
7) Add black pepper to season, and for extra flavour you could add herbs or wine.
Red Wine Sauce Recipe:
1) Fry 1-2 finely chopped shallots (or 1 medium onion) in a little oil until soft.
2) Add 1tablespoon of flour and heat through, while stirring, for about 1 minute.
3) Increase the heat and pour in 1 glass of red wine, bring to the boil, then lower the heat and simmer till the sauce thickens slightly.
4) For extra flavour you could add some herbs.
