Salads
Homemade salads can make a healthy, low salt alternative to sandwiches. Using bases such as pasta, rice, potatoes or couscous will help to fill you up. Marinate meat or fish prior to cooking or cook with spices to give extra flavour. Steamed or tinned fish (in spring water) such as tuna or salmon are lower in salt than smoked fish. Using chopped fresh herbs and different homemade dressings (recipe) will also add to the flavour . Some ideas for lunch box salads are:
Pasta salad with....
- Tinned tuna, sliced red onion, cannelini beans and cherry tomatoes
- Shredded cooked chicken, cherry tomatoes, chopped basil and pinenuts
- Roasted mixed vegetables (e.g. peppers, courgettes, aubergine) with kidney beans and chopped tomatoes
- Steamed salmon, green peas, sliced spring onions, lemon juice and chopped dill
- Chopped avocado, cherry tomatoes, chopped basil and pinenuts
Rice salad with....
- Spicy chicken strips, green peas and sliced mushrooms
- Steamed salmon with cucumber, chopped dill and lemon juice
- Roasted mixed vegetables (e.g. peppers, courgettes, aubergine), chickpeas and chopped parsley
- Curried salmon or chicken pieces with sultanas and sliced spring onions
Potato salad with....
- Tinned tuna, sliced red onion, cherry tomatoes and chopped parsley
- Curried chicken pieces with sultanas and fresh fruit segments
- Steamed salmon, sliced celery and apple with chopped mint
- Boiled egg segments, cress and tomato
Couscous salad with....
- Spicy chicken pieces, chickpeas, sultanas, chopped dried apricots and parsley with toasted almonds
- Roasted mixed vegetables (e.g. peppers, courgettes, aubergine) with olive oil, lemon juice and chopped basil
- Curried salmon pieces, sliced red onion, tomatoes, cannelini beans and chopped parsley
