Pizza Omelette (serves 2)

Ingredients:
4 large eggs
Freshly ground pepper
Pinch of dried mixed herbs
1 tablespoon olive oil
25g mature cheddar cheese*, grated
1 spring onion, finely sliced
1 large tomato, finely chopped

Method:
1) Break the eggs into a jug and lightly whisk. Season with pepper and dried mixed herbs.
2) Heat the oil in a non-stick omelette pan then pour in the egg mixture.
3) As it begins to set around the edges (after about 30 seconds), gently mix to ensure that all the egg gets cooked.
4) Once the egg mixture is nearly set (after about 1 minute) sprinkle the cheese, spring onion and chopped tomato over the top.
5) Continue to cook until the base of the egg mixture has firmed up then, using a spatula fold one half over the other to encase the filling.
6) Cook each side until light golden brown.
7) Slide the omelette onto a serving plate, divide into two portions and serve with a green salad.

Alternatives:
Add other vegetables such as chopped garlic and sliced mushrooms or sliced red onion and green pepper instead of spring onion and tomato.

* Cheese is a source of salt so use sparingly. Mature cheddar gives a stronger flavour than mild, so a smaller amount is required to obtain a cheese flavour in your cooking.
