Shepherds Pie (serves 4)
Ingredients:
1lb potato, peeled and chopped
1 large onion finely sliced
2 gloves garlic finely chopped
1 lb (450g) lean minced lamb
Method:
1) Boil the potatoes in water until tender, drain and mash.
2) Fry the onion in a little oil until softened, then add the garlic and cook for a further minute.
3) Add the minced lamb and cook until browned, whilst stirring and breaking up the meat.
4) Place the cooked minced lamb into an oven proof dish and top with the mashed potato.
5) Bake in a pre heated oven (200 o C / 400 o F / Gas mark 6) for 20 minutes.
6) Serve with boiled or steamed vegetables.
