Buckwheat Porridge with Grated Apple


This a great, easy and nutritious breakfast that can be prepared the night before. Makes a change to the usual porridge, and perfect for those dark wintry mornings! This buckwheat porridge is grate with a few blueberries scattered, or a few chunks of apple to garnish.



1 cup buckwheat
2 cups of semi-skimmed milk
2 cups water
1/2 cup chia seeds
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
2 apples, grated (with skin)



Serves 4

1. Add the buckwheat, milk, water, seeds and vanilla extract into a bowl and mix well. Cover and leave to chill overnight.

2. Add the grated apple to the mixture and cook over a medium/low heat until it starts to thicken, about 5 minutes or so. If it starts to stick to the pan, add a little more water.

3. Sprinkle over the cinnamon and enjoy!
