Low Salt Salad Dressing

This simple vinaigrette can be used as is or can be a basis for creating a variety of flavours without including all the unnecessary salt of shop bought dressings.




4 tablespoons olive oil
2 tablespoons white wine vinegar, lemon juice or a combination
Freshly ground black pepper, to taste.












1) Simply whisk or blend all the ingredients together and serve with your favourite salad.


For a herb dressing add a handful of chopped fresh herbs (e.g. parsley or basil)
Add a few tablespoons of orange juice for a citrusy tang
Try adding crushed garlic or minced onion for flavour
Dried chillies or paprika will give your dressing a bit of a kick
Egg yolk (of a hard boiled egg, sieved) gives and interesting texture
Honey can be added as a variation and help keep the dressing emulsified (honey goes well with orange)
A drizzle of balsamic vinegar gives an alternative flavour
