Avocado and Mozzarella Salad

This Italian salad is a perfect light lunch for one. You can prepare it the morning or the night before you need it.



Large handful rocket
Small handful fresh basil
1/4 medium-sized red onion, halved and thinly sliced
60g cherry tomatoes, halved
30g mozzarella (pearls or balls)
1/2 an avocado, peeled, and sliced
1/2 tablespoon lemon juice

For the vinaigrette
1 tablespoon fresh basil, chopped
1 tablespoon olive oil
1/2 tablespoon lemon juice
freshly ground black pepper









1) Arrange the rocket, basil, onion, tomato and mozzarella in a bowl.
2) Drizzle the lemon juice over the avocado to prevent it from turning brown then add to the salad.
3) Whisk together the vinaigrette ingredients and drizzle over the salad. Garnish with fresh basil and serve.


1/2 a tablespoon of balsamic vinegar in place of the lemon juice in the vinaigrette will give this salad an alternative flavour.
