Pasta Salad

 This creamy pasta dish is easy to prepare and will be on the table in no time.


200g pasta shapes
2 tomatoes, chopped
1/4 cucumber, chopped
1 tablespoon raisins
75g low-fat cheddar cheese, cubed
3 tablespoons natural yoghurt
2 tablespoons low-calorie mayonnaise
4 large lettuce leaves
3 spring onions, sliced









1) Cook the pasta following the instructions on the packet then drain and allow to cool in a large bowl.
2) Add the tomato, cucumber, raisins and cheese to the bowl and stir together. Then mix thoroughly with the yoghurt and mayonnaise.
3) Serve each portion on a lettuce leaf and scatter with the sliced spring onions.


Add 25g toasted cashew nuts. If low-calorie mayonnaise is unavailable, use standard mayonnaise but add half the amount and top up with more yoghurt.
