Potato Salad


 Serves: 12
Prep time: 10 minutes

Cooking time: 25 minutes plus cooling time


500g new potatoes, scrubbed
2 tablespoons mayonnaise
2 tablespoons low fat fromage frais or low fat sour cream
4 or 5 spring onions, finely chopped
2 tablespoons chives, chopped
Freshly ground black pepper, to taste
Hard-boiled egg, chopped (optional)







1) Boil the potatoes for 20 – 25 minutes or until soft. Drain and leave to cool but ensure they retain some warmth before chopping into bite-size pieces.
2) Combine the remaining ingredients in a bowl and carefully stir in the potatoes. Doing this while the potatoes are still warm will allow them to break down a little into the dressing.


Low fat mayonnaise can be used but be careful to check the label, it can be higher in salt than regular mayonnaise.
