Red Cabbage with Sugar and Spice

This colourful side dish will make a wonderful accompaniment to roast poultry, pork or game. This dish can be made the day before to save on cooking time and to allow the flavours to develop.



550g (1) red cabbage, shredded
250g (1 large) onion, finely chopped
2 cooking apples, peeled, cored and finely chopped
2 garlic cloves, finely chopped
75g red currants, dried cranberries or prunes (chopped)
1 teaspoon ground allspice or cinnamon
1 tablespoon sugar
Freshly ground black pepper
1 tablespoon red wine vinegar
1 tablespoon olive oil






1) Preheat the oven to 1500c/3000f/gas2.
2) Arrange a layer of cabbage in the base of a large casserole dish. Scatter over the onions, apples, garlic, currants, spices, sugar and pepper a layer at a time. Continue to alternate the layers until all the ingredients are used.
3) Sprinkle over the vinegar and oil. Cover the dish with foil and bake slowly in the oven for 11/2 – 2 hours.
